Job description
Essential Duties and Responsibilities:
- Responsible for the day to day execution of the dietary department operations.
- Complies with federal, state and local health and sanitation regulations.
- Management of dietary staff, including, hiring, scheduling coaching, counseling, training and developing.
- Trains kitchen staff in food preparation, food safety, operation of equipment and regulatory standards.
- Oversee and participate in the planning, preparation and serving of meals for clients, including options for special dietary restrictions.
- Ensure food preparation and production meets operational standards by maintaining a quality assurance program.
- Participate fully as a member of the facility leadership team
- Participate in client satisfaction programs and activities.
- Manages safety, sanitation, organization and maintenance programs throughout the department.
- Conduct audits and create action plans based on findings, in areas such as sanitation, satisfaction and food and meal quality.
- Follows established menu, including standardized recipes and portioning.
- Management of the ordering, inventory and receiving of food and supplies.
- Financial management to include food cost and labor.
- Lead daily and weekly dining service team meetings. Attend and actively participate in staff and operations meetings and trainings as requested.
- Collaborate and consistently communicate with the facility dietitian and in order to meet the nutritional needs of the clients.
- Maintain all department data as requested, including but not limited to, meal counts, budget figures, labor hours and satisfaction scores.
- Other duties as deemed necessary.
Education, Licensure, & Experience
- PREFERRED Degree in Culinary Arts
- Equivalent professional experience OR progressive culinary/kitchen management experience in lieu of degree
- Institutional and batch cooking experiences.
- Purchasing, food storage and sanitation experience.
- SERVSAFE Training- highly desirable
