JOB SUMMARY

Under the direction of the Director of Dining Services, the Dining Services Manager, is responsible for directing work of the Sous Chef, Cooks, and food service workers in the preparation of attractive and appetizing meals, following established recipes and department procedures. Assists in directing janitors and staff in the proper cleaning and sanitation procedures. Ensures compliance with Local State and Federal regulations. Provides an overall excellent dining experience to all levels of care by performing the following duties.

ESSENTIAL FUNCTIONS FOR A DINING ROOM MANAGER

Includes the following. Other duties may be assigned as necessary.

· Provides quality Customer Service efficiently to residents, families, co-workers and vendors in a manner to ensure satisfaction.

· Test cooked food by tasting and smelling it in order to ensure palatability and flavor conformity.

· Investigate and resolve complaints regarding food quality, service, or accommodations.

· Schedule and receive food and beverage deliveries, checking delivery contents in order to verify product quality and quantity.

· Monitor food preparation methods, portion sizes, and garnishing and presentation of food in order to ensure that food is prepared and presented in an acceptable manner.

· Monitor budgets and payroll records, and review financial transactions in order to ensure that expenditures are authorized and budgeted.

· Schedule staff hours and assign duties.

· Responsible for inventory controls including assisting with weekly inventory; maintain food and equipment inventories; keep inventory records

· Assists the Director of Dining Services in menu planning of cycle menus, catering, special events and Theme Days.

· Monitor compliance with health and fire regulations regarding food preparation and serving, and building maintenance in lodging and dining facilities.

· Responsible for completion of all sections of the production sheets, including: Completion of production sheets for production purchasing, so there is a two-week leeway, daily pre-production meeting to review days’ production.

· Assists Dining Room Supervisor with pre-service meeting at lunch and dinner.

· Responsible for visiting the residents in the dining room during meal times to listen to complaints, suggestions and compliments.

· Responsible for department sanitation, to include physical plant, equipment, and small-wares. Responsible for meeting OBRA, Title 22, State and Federal Sanitation Codes and Requirements.

· Coordinate assignments of cooking personnel in order to ensure economical use of food and timely preparation.

· Keep records required by government agencies regarding sanitation, and food subsidies when appropriate.
