Bleecker and Greer began as a whole animal butcher shop ten years ago and has grown to include the production of charcuterie, prepared foods and bakery items. Our mission is to promote the benefits of small scale diversified farms by providing a showcase for their products. Nose-to-tail butchery helps reduce food waste, promote sustainability, and encourage the ethical treatment of animals.
Our kitchen is centered on the core of our business model - how to add value to the many cuts (beef, pork, lamb, veal, poultry) which do not end up in the Butcher case. That means turning bones into soups, fat into pastries, trim into charcuterie. Our customers have an insatiable appetite for our offerings and we want to offer even more opportunities.
We are looking for a motivated, experienced cook who can help expand our popular lunchtime cafe program. This position is responsible for producing the regular menu including daily specials, facilitating prep lists, and maintaining regular cafe inventory. This position works directly with our lead chef on coordinating menu ideas.
THE RIGHT CANDIDATE:
*Coordinates with lead chef and butcher department on ingredients and plans menus accordingly
*Works with kitchen team in daily production of menu items for the cafe
*Uses local and seasonal ingredients whenever possible
*Is team oriented and helps out wherever needed (including cleaning and dishwashing)

REQUIRED QUALIFICATIONS:
Prior kitchen experience as a line cook, a thorough understanding of inventory management, procurement and recipe costing.
DESIRED QUALIFICATIONS:
Basic knowledge of whole animal butchery.
Desire to work with locally sourced ingredients when ever possible.
A culinary degree or associate's degree and certification in safety procedures.
Servsafe Food Handler certified.
Familiar with using printing scales and labeling software.
